Holiday SpecialsMel considers any dish whose recipe people beg for as his can't miss signature dishes. Every time he cooks his pan fried oysters with hot lemon garlic sauce, people want the recipe. Anybody who tastes one of his gumbos is going to find it hard to pick a favorite: creole-style seafood gumbo has a strong flavor which makes the seafood standout; chicken and sausage gumbo with a dark roux base has a bold and unique flavor.

 

North Carolinians are very proud of their BBQ heritage and many draw a line in the sand between eastern vinegar-based and western mustard-based BBQ. However, Mel's cochon de lait, or Cajun BBQ, is sure to blur the lines of loyalty as his sauce has a bit of everything - sweet, vinegar, tomatoes, and of course, some secret ingredients.

 

A night at Mel's restaurant is not complete without dessert. He pulled a beignet recipe from an old book in the New Orleans library and has been perfecting the recipe and technique the last 30 years.
