Nicknamed "The Zydeco Chef" by his friend and former band-mate C.J. Chenier, Mel has enjoyed the success of two careers for over twenty years - one as a singer, songwriter and harmonica player and the other a a professional gourmet chef and food consultant. According to Mel, "The food and music of Acadiana have always been inseparable for me."
In an attempt to describe the roots of his music and food, Mel recited all of the influences that came to him from his long stay in the Bayou State. "There's zydeco of course, and Cajun and blues, and New Orleans jazz and funk. But as far as what we're doing on the stage and in the kitchen, I like to call it 'Mojo'. Down in Louisiana, everyone cooks, but the all have their own little way of stirring things up."

Food and Music are parallel art forms for Papa Mojo's Roadhouse founder Mel Melton. Both allow for instant feedback. Both are exciting and fast-paced. You have a team in the kitchen and on the floor that's a lot like a band. Mel's passion for both is the key ingredient that drove his vision for Papa Mojo's Roadhouse.
"When people leave one of our shows or my restaurant, I want them to feel like they've been down in the swamp at a big party and they've had a great time. That's what it's all about."
